You will need:

  • pumpkin puree - 1 glass;

Preparation

Add chopped onions, chopped carrots to the minced meat. Fry everything in a preheated pan until golden brown, then pour one glass of pumpkin puree.

Pour water into a saucepan and add salt. After the water boils, lower the sliced pumpkin pieces. Cook the pumpkin until tender, then add the minced meat, vegetables and pumpkin puree mixture to the saucepan.

Boil. Season with salt, pepper, squeeze out the garlic.

Serve pumpkin soup with herbs and sour cream.

Pumpkin puree soup

You will need:

  • pumpkin - 600 g;
  • chicken fillet - 300 g;
  • potatoes - 100-200 g;
  • carrots - 100 g;
  • onions - 1 pc.;
  • garlic - 2-3 cloves;
  • cheese (hard varieties) - 50 g;
  • lemon juice - 0.5 tsp;
  • butter - 1 tablespoon;
  • salt, bay leaf, parsley - to taste;
  • sour cream - 1-2 tablespoons

Preparation

Boil the chicken fillet. Pour water into a saucepan, put small pieces of chicken fillet, add salt, half of the peeled onion, spices to taste, black peppercorns, 1 clove of garlic.

Separately, in a saucepan, fry chopped onions, a little chopped greens in butter. Then put the grated carrots and fry everything together until tender. Peel and cut the potatoes and pumpkin into cubes. Add the chopped pumpkin and potatoes to the saucepan.

The broth in which the chicken was cooked must be filtered and about 1 liter pour the fried mixture into a saucepan.

Cover the saucepan and simmer for 15-20 minutes, until the pumpkin is soft. Add chopped garlic at the end.

Using a blender, grind the soup to a puree consistency. The density can be adjusted. If the pumpkin soup is thick, then add the broth.

Add salt, a little lemon juice, grated cheese, chicken cut into pieces. Stir and bring the soup to a boil over low heat.

Soup is best served with fried loaf cubes, herbs and sour cream.
