- 2 cups of flour;

Sift flour through a sieve with a slide and make a depression in the center. At the egg, separate the yolk from the white. Whisk the yolk and add cold water, salt and citric acid to it. Mix everything very well, pour into the groove in the flour and knead into a smooth elastic dough.

Then cover it with a napkin and place it in the refrigerator for half an hour. At this time, mix 3 tablespoons of flour with butter or margarine, roll out into a square and also put in a cool place. As a result, the dough and butter-flour mass should turn out to be equally steep.

When they have set, roll out the dough into a square larger than the buttery layer. The dough should be thicker in the middle than at the edges.

Place the butter mass at a corner in the middle of the rolled out layer and fold the edges of the dough with an "envelope". Roll everything out so that you get a rectangle about one and a half centimeters thick. Then fold it 3-4 times, cover with a damp cloth and place back in the refrigerator.

After the dough has cooled, roll it back into a layer, fold it several times and put it in the refrigerator for 15 minutes. Repeat this procedure 3 more times. Keep the finished dough in the refrigerator and use to make pies.

Recipes for non-yeast dough pies

The yeast-free puff pastry is suitable for pies with both sweet and savory fillings. To bake pies with meat, you need to take:

- 500 g of puff yeast-free dough;

- 50 g flour;

- 350 g ground beef;

- 350 g minced pork;

- 1 egg;

- 100 g of onions;

- ½ tsp salt;

- ground black pepper;

- vegetable oil.

Peel the onions, chop finely and fry in vegetable oil until golden brown. Mix the ground beef and pork and also fry in vegetable oil until tender. Then combine the minced meat with onions, add salt, pepper and mix well.

Roll out the puff pastry into a layer and divide it into squares. Place meat filling on top of each, form triangles and pinch gently. Spread the patties on a baking sheet, brush each with a beaten egg and bake in the preheated oven for about 25 minutes.

To prepare puff pastries with apples, you will need:

- 500 g of puff pastry;

- 500 g of apples;

- 100 g of sugar;

- 10 g of cinnamon;

- ½ lemon;

- 1 egg.

Wash apples under running water, dry and peel. Then chop finely and drizzle with lemon juice. Add granulated sugar, cinnamon and mix thoroughly. Leave the filling on for a while until the apples produce juice and gently drain. Roll the puff pastry into a layer and cut it into squares, place on top of each apple filling and pinch around the edges. Transfer the pies to a baking sheet, brush each with a beaten egg and place in an oven preheated to 189 ° C to bake for 20 minutes.
