It is necessary

  • - rabbit meat 1-1, 5 kg;
  • - 1 head of garlic;
  • - potatoes 1 pc.;
  • - olive oil 4 tbsp. l.;
  • - dry white wine 1 glass;
  • - 2-3 pinches of savory;
  • - rosemary 3 branches;
  • - 5 branches of caraway seeds.

Step 1

First you need to defrost the rabbit meat. Then cut it into large portioned pieces, approximately there should be 7-8 pieces. Remove lungs, kidneys, and all other fat from the inner cavity of the rabbit.

Step 2

Wipe the pieces of rabbit meat with a napkin and salt. Take the rosemary and cumin leaves and sprinkle them over the cuts of meat. Sprinkle the whole thing with two or three pinches of savory. Next, you need to pour the meat with dry white wine and leave to marinate for 3-4 hours.

If you are going to cook not rabbit meat, but a hare, then first it should be soaked in acidified water for several days in order for the smell of wild hare to go away. Then, when the rabbit meat is marinated, pour the marinade into a cup. Wipe the pieces of meat with a dry napkin and pepper a little.

Next, brush the pieces of meat with olive oil and place them in a special heat-resistant dish. Add the garlic cloves by crushing them and the rosemary sprig. Peel the potatoes, cut them into small slices and season with salt and pepper as well. Brush the potato slices with oil and add to the meat.

Drizzle over this whole mixture with half a glass of the remaining wine marinade. Next, cover the form with meat with food foil. Then place the bunny dish in an oven already heated to 220 degrees. Bake until the liquid boils, about half an hour or 40 minutes.

Step 6

After cooking, remove the form from the oven, remove the foil from it and leave to bake for another 20 minutes, setting the oven temperature to 240 degrees. Wait for the rabbit to brown, then turn it over with a fork and wait another 20 minutes. While the liquid is boiling, you can add some more marinade. The meat is ready! Now you can safely put the dish on a plate, along with potatoes, decorating everything with a rosemary branch.
