It is necessary

  • For biscuit:
  • - 3 eggs;
  • - 80 g flour;
  • - 1/2 tbsp. spoons of cocoa powder;
  • - 90 g sugar;
  • - butter;
  • For the cream:
  • - 90 g sugar;
  • - 90 g butter;
  • - 1-1, 5 teaspoons of potato starch;
  • - 1 teaspoon of cocoa powder;
  • - 1/2 glass of milk;
  • - 1 teaspoon of brandy or liquor;
  • For glaze:
  • - 2 tbsp. tablespoons of butter;
  • - 50 g of chocolate.

Instructions

Step 1

Beat eggs and sugar thoroughly. Add flour and cocoa. Using these ingredients, prepare a light dough.

Step 2

Line a baking sheet with baking paper and oil. Place the dough in there. It is necessary to bake for 15 minutes at an oven temperature of 190 degrees. After the biscuit is ready, transfer it to a towel and roll it up.

Step 3

Let's start preparing the cream. Dilute the starch with a little cold milk. Stir the sugar into the remaining milk separately. Bring this mixture to a boil, stirring constantly. Add the starch and milk in a thin stream, reduce the heat and, stirring occasionally, cook until the cream thickens. Then let it cool down to room temperature. As a result, the consistency of the cream should become similar to jelly.

Step 4

Whisk the butter until white, gradually adding the cocoa, cream and brandy.

Step 5

Unroll the cooled roll, brush with cream and roll up again. Wrap the dish in plastic wrap and refrigerate.

Step 6

The last stage is the preparation of the glaze. Break the chocolate. Melt it in a water bath along with softened butter. Lubricate the roll with icing and return to the refrigerator to set the icing.
