To prepare chicken roll in the dough, you will need the following components:

- 3 chicken breasts;

- 500 g lean pork belly;

- 500 g of fresh mushrooms;

- 500 g of puff pastry;

- 2 eggs;

- 6-7 tbsp. sour cream;

- spices;

- pepper;

- salt.

Rinse lean pork brisket, dry and mince. Salt and pepper, add 4 tablespoons of sour cream and stir everything thoroughly. Cut the chicken fillet into large thin slices, then beat well. It is more convenient to do this through a plastic bag. Season with salt, pepper and spices to taste. Then lay the prepared chicken fillets overlapping each other on cling film, forming a rectangular layer. Spread the cooked minced pork on top and gently roll the layer into a roll using cling film.

Wipe the champignons thoroughly with a damp cloth and bake in the oven at 220 ° C for 15-25 minutes. During this time, the mushrooms will dry up and give a strong aroma. Then pass the baked champignons through a meat grinder, add 2-3 tablespoons of sour cream, 1 pre-beaten egg, salt, pepper and mix everything well.

Roll out the puff pastry on parchment paper into a large, thin layer. In the middle of it, spread half of the cooked mushroom minced in a strip. Place the chicken roll on top and carefully coat it on all sides with the remaining minced mushroom. Then wrap the roll with dough, pinch the edges, cut off the excess dough, and brush the surface with a beaten egg. Then make some small holes for the steam to escape. Grease a baking sheet with vegetable oil, carefully transfer the roll onto it and place in an oven preheated to 220 ° C.

When the surface of the roll is browned, reduce the heating temperature to 180 ° C, cover the roll with foil and bake it for another 40 minutes. Put the finished roll on a dish and cover with a towel. Serve warm, cut into slices.

Minced pork in a chicken roll can be replaced with giblets filling. This will require:

- 100 g of chicken hearts;

- 100 g of chicken stomachs;

- 100 g of chicken liver;

- 1-2 heads of onions;

- 20-30 g of butter;

- salt;

- pepper.

Chicken giblets (hearts, stomachs and liver), rinse and boil. Then pass through a meat grinder. Peel the onions, chop finely and fry together with the prepared minced meat from giblets in butter. Season the filling with salt and pepper and mix well.
