A very tasty, juicy dish, the preparation of which only for the first time may seem not entirely simple. Fresh sage gives the chicken roll an unusual spicy taste.

It is necessary

  • - 1700 g of chicken (whole carcass);
  • - 320 g of white bread;
  • - 230 ml of cream;
  • - salt;
  • - a few sprigs of fresh sage.

Instructions

Step 1

The most important step in this recipe is preparing the chicken for the roll, you must first of all gut and rinse the carcass thoroughly, then put it breast down on a cutting board.

Step 2

After that, deeply cut it along the ridge and carefully separate the meat from the bones with a knife, being careful not to hurt the chicken skin and fillets. Slowly, carefully pull out the ridge and ribs, cutting off the tendons. Separate the bones from the wings and legs of the chicken using a very thin knife, which should be used to cut the fillets and tendons from the bones.

Step 3

Cut off a small part of the fillet and leave for the filling. Spread the finished boneless chicken carcass on the board, mash a little for evenness and rub with salt.

Pour cream into pieces of a loaf without a crust. Finely chop the deferred part of the chicken fillet. Chop sage leaves. Mix the soaked loaf, sage and chicken fillet, salt.

Transfer the filling to the chicken, distribute over the surface, then twist in the form of a roll and secure in several places with toothpicks.

Place the roll in a baking dish and place in the oven for about 55 minutes, 10 minutes before cooking can be covered with foil.
