A Norwegian recipe for a gentle salmon soufflé that melts in your mouth. The dish is ideal for a romantic dinner.
It is necessary
- For soufflé (10 servings):
- - fillet of salmon or trout, 500 g;
- - eggs, 2 pcs.;
- - cream (33-35%), 300 ml.
- For decoration:
- - cream cheese (e.g. Mascarpone, Philadelphia)
- - Red caviar.
Instructions
Step 1
Chop the fish into large chunks and chop it in a blender.
Step 2
Whisk egg whites with salt, add cream. Continue whisking until thickened.
Step 3
Add fish to the protein-creamy soufflé. Pour the resulting mixture into silicone baking tins.
Step 4
Place the molds in a deep baking sheet. Pour water over it so that it covers the molds to the middle. Bake the soufflé for 35-40 minutes. in an oven preheated to 180 degrees.
Step 5
Cool the finished soufflé, then remove it from the molds.
Step 6
Using a pastry syringe, decorate the soufflé with cheese (around the edges), and put the red caviar in the middle.
