Great Lent demands strict self-restraint from believers in all spheres of life, including food. Meat, dairy and fish dishes will have to be excluded from the diet. Even vegetable oil should not be consumed in the first and last weeks of fasting, as well as on Mondays, Wednesdays and Fridays.
With all the restrictions, it is still not worth bringing the matter to diseases of the gastrointestinal tract, since you can cook tasty and healthy dishes from vegetables, cereals and mushrooms, for example, lean kulesh.
Cut the root vegetables into small cubes, cover with cold water, bring to a boil and cook over low heat. When the roots are half cooked, pour well-washed millet into a saucepan and boil for 10-15 minutes. Then add the potatoes, cut into small cubes. Fry thinly chopped onions in sunflower oil and transfer to a kale when the potatoes are almost ready. Season with salt and add bay leaves and herbs to taste.
Ingredients:

- millet groats - 0.5 cups;
- onions - 2 pcs.;
- carrots - 1 pc.;
- celery root - 1/3 pcs.;
- parsley root - 1 pc.;
- bay leaf - 1 pc.;

mushrooms. Rinse dry mushrooms, cover with water and cook until half cooked. Pour the mushroom broth into a separate container. Chop the onion thinly and fry in vegetable oil. When the onion is browned, add the finely chopped boiled mushrooms and fry until tender over low heat, covered. Put millet groats in the mushroom broth and cook for 15 minutes, then add potatoes cut into small cubes. About 2 minutes before the kulesha is fully cooked, transfer the mushrooms and onions to the pan, salt, add bay leaves and herbs to taste.

Lean dumplings are very tasty. Sift flour with a slide, pour in sunflower oil and boiling water in which salt is diluted. Quickly knead a not too steep dough and cover with a napkin for 20 minutes. Divide the dough into pieces, roll out and cut out circles with a teacup. You can also use a variety of dumplings. Frozen berries or mashed potatoes with mushrooms are useful as a filling.
Boil dry mushrooms and fry with onions, as described above. Fry fresh mushrooms (champignons or oyster mushrooms) immediately with onions. Boil peeled potatoes, mash well so that there are no lumps, and add mushrooms and onions, salt and mix.
