To prepare balesh, you can take any meat, including chicken and goose. The only requirement is that it must be fat. By the way, the Tatar meat pie is also prepared with offal. In the traditional version, it is customary to add potatoes to baking, but there are recipes with radish, cabbage, pumpkin and even cereals, raisins and dried apricots.

The first step is to prepare the dough for the Tatar meat pie. First, the butter is melted in a water bath, and then in a deep bowl it is mixed with kefir, sour cream, egg, salt. Soda is quenched with vinegar and carefully added to the dough, the flour is sifted and gradually added to the contents of the bowl. The consistency of the dough must be elastic so that a large ball can be formed from it. It is covered with a cloth and left to breathe.

At this time, the broth and filling are prepared. Meat and potatoes are cut into pieces of equal size, diced onion, salt and pepper are added to them, and mixed. And to make these products juicy, you need any meat broth. Instead, you can make a pouring of hot water, salt and butter.

The rested dough is divided into 2 unequal parts: one should be twice the size of the other. The larger part is rolled out and placed in a mold so that its ends hang down by 6-7 cm. The smaller part is divided into 2 more parts and a small piece is pinched off from one. Spread the filling on the dough, then another layer of dough and pinch the edges. The second half of the dough is rolled out, cut into the rays of the sun and the cake is covered with it.

To pour the broth into the baked goods, make a hole in the center of the upper part and cover with the remaining small piece of dough. You don't need to pour the broth yet! The oven is heated to 200 degrees, and the cake is greased with butter. The dish is baked for 60 minutes, then 1, 5 glasses of broth are poured into the hole and the pie is sent to the oven for another 40-50 minutes.
