As you know, dandelion is not just a weed, but a medicinal and completely edible plant. Dandelion leaf salads are fresh, healthy and tasty.
Sauerkraut and Dandelion Salad
Ingredients:
- boiled egg;
- 60 grams of sauerkraut / pickled cabbage;
- a bunch of young dandelion leaves;
- green onions;
- 70-80 gr sour cream.
Preparation:
1. Wash young dandelion leaves and green onion feathers and chop medium-sized.
2. Add chopped egg, cabbage to greens and season with sour cream. Salting is optional if the sauerkraut is salty enough.
Dandelion salad with pork and sorrel
Ingredients:
- a bunch of young leaves of sorrel and dandelion;
- a small piece of boiled pork;
- vegetable oil for refueling;
- 5-6 walnut kernels;
- 1 teaspoon of honey;
- salt and pepper.
Preparation:
1. Wash dandelions and sorrel, cut and add salt. Mix everything.
2. Cut the boiled meat into small pieces and add to the herbs.
3. Mix vegetable oil with honey, add a little ground pepper if desired and season salad. Stir the ingredients.
4. Sprinkle everything on top with chopped nuts.
Cucumber and Dandelion Petal Salad
Ingredients:
- 4 small cucumbers;
- 3 tablespoons of mayonnaise;
- 2 tablespoons of dandelion petals;
- greens;
- salt and pepper.
Preparation:
1. Cut the washed cucumbers into strips. Add chopped herbs (dill, parsley, green onions).
2. Salt the salad, add pepper and mayonnaise. Sprinkle dandelion petals on top.
