Step 1
Rinse 280 grams of fresh spinach thoroughly, pat dry with a towel. Cut off the stems. Chop the leaves finely.

Pour 2 tablespoons of olive oil into a frying pan, heat over medium heat. Add the spinach to the skillet with oil, fry for a few minutes, stirring constantly. Then carefully place the spinach in a blender, add a little hot water and grind into a smooth paste.
Step 3
Peel and chop one medium onion. So that the onion does not irritate the eyes, periodically substitute the knife under a stream of cold water. Put 4 tablespoons of butter in a saucepan, melt over medium heat and add onion. Pass it through to transparency. Add a quarter cup flour. Stir constantly and cook for 1-2 minutes.

Then pour 5 cups of milk into a saucepan of flour. Season with salt and pepper to taste. And simmer for about five minutes. Add spinach. While stirring, bring to a boil (increase heat). Make garlic croutons. Finely chop 2 cloves of garlic: crush a little with a knife and chop. Put the chopped garlic in a batter with a little vegetable oil. Fry for 2-3 minutes. While it's grilling, cut 4-5 slices of white bread into cubes. Catch the pieces of garlic with a slotted spoon or spoon and discard. Place bread cubes in a skillet with garlic oil. You can add a lump of butter. Fry the croutons until crisp and browning. Grate 120 grams of hard cheese on a coarse grater.

Pour the spinach soup into bowls. Sprinkle with grated cheese and add croutons. Stir lightly and serve.
