3 ripe bananas, 250 grams of freshly squeezed orange juice, 3 orange slices, 1 lemon, 1 glass of cognac or rum, 4 yolks, 2 chicken egg whites, 2 tablespoons of sugar, 10 grams of gelatin, 250 grams of cream, 1 bag of vanilla sugar

Step 1
Crack the eggs and separate the yolks from the whites. Mix the yolks with sugar and vanilla, mash until white.
Step 2
Pour the gelatin over with cold water and leave for 20-30 minutes. Squeeze the juice out of the lemon.
Step 3
Combine orange and lemon juice, put on low heat and bring to a boil. Add the yolk mass to the juice.

Pour the yolk mass into a small saucepan, pour in the hot juice and place in a large container. Heat in a water bath for 5 minutes, whisking the mixture.

Turn off the heat and pour gelatin into the cream. Place the cream in the cold until it is completely cooled.

Add 2 egg whites to the cream and beat until stiff. Mash the bananas with a fork.
Step 7
Add bananas, cognac and whipped egg whites to the cream. Arrange in bowls, garnish with orange slices and leave in the refrigerator for 1 hour. Serve chilled.
