We suggest preparing you a light and aromatic citrus cream with a spicy note of cardamom. It is wonderful on its own and also great for cakes, pastries and other desserts.
It is necessary
- Fine sugar - 1 glass
- Orange juice - 1/2 cup (from 1 large orange)
- Peel from 1 orange
- 1/4 lemon juice
- 3 chicken eggs
- 150 grams of butter
- A few kernels of cardamom
Instructions
Step 1
Combine lemon and orange juice, 1/2 cup sugar, and bring to a boil in a small saucepan (preferably thick bottom). If the zest has been minced coarsely enough, strain the juice.
Step 2
Whisk eggs and remaining sugar until fluffy in a bowl. Pour some hot juice into the egg mixture in a thin stream, stirring constantly. This is to prevent the mixture from curdling. Add cardamom grains to the mixture for flavoring. Place the bowl in a water bath and gently add the remaining juice, stirring constantly. The finished mass should resemble liquid honey. Remove the bowl and cool the mixture to about 40 degrees (a drop of the mixture applied to your wrist should feel very warm, but not scalding).
Step 3
Cut the softened butter into small pieces. Remove the cardamom seeds from the cream, add oil to it, beat the cream until a fluffy mass is obtained.
