-1 turkey;
-100 g fat;
-50 g butter;
-mayonnaise, salt, garlic, herbs.
Preparation
Rub the prepared turkey carcass with salt and garlic. After 2 hours, put the carcass on a baking sheet, brush with mayonnaise, pour in a glass of water and bake in a hot oven for 3 hours, occasionally grease with melted butter or fat and add water.
At the end of baking, cover the turkey and reduce heat. Check if the meat is done with a wooden stick. If you pierce the meat and the juice does not flow from it, then the dish is ready.
Before serving, cut into portions, place on a plate, as a side dish with fresh, chopped vegetables. Serve hot or cold with parsley sprigs. The turkey can be baked by stuffing with apple and prune wedges.
It is better to choose a turkey with a weight of no more than 5 kg, so as not to suffer during baking.
The skin should be light, without any spots. It depends on your choice of turkey what it will be like when you cook it, if you buy an old turkey, then nothing good will come of it, the meat will not really bake and will be tough and dry.
If you purchased frozen poultry, so that it is completely defrosted, it will take a lot of time, so a bird weighing 5-6 kg will defrost for about 20 - 22 hours. After defrosting, the remaining feathers and long hairs, if any, should be removed from the turkey.
To make the meat juicy, you should prepare a marinade and keep the bird in it all night. Marinade can be made from aromatic herbs and champagne or wine. The lightest kind of marinade is made by rubbing the carcass with garlic salt and pepper, after 1, 5 - 2 hours, you can already start cooking.
