    • onions - 1-2 pcs.;
    • champignons - 250 g;
    • sour cream - 250 g;
    • hard cheese - 100 g;
    • garlic - 1 clove;
    • flour - 1-2 tablespoons;

    • pepper.

Step 1

Rinse the beef well in running water and pat dry well with a paper towel. Cut the meat across the grain into small cubes or columns and beat lightly. Heat a skillet with sunflower oil and sauté the beef slices until golden brown. Turn off the fire.

Peel the onions and garlic. Wash the mushrooms. Dice the onion, chop the garlic, and chop the mushrooms in any way. Heat the sunflower oil in a second skillet. Fry the onion and garlic until golden brown, then add the mushrooms and fry until the excess moisture evaporates.

Add the fried mushrooms and onions to the meat, mix and fry a little (about 1-2 minutes) all together. After that, reduce heat and cover the dish with water so that it slightly covers the beef. Cover the skillet with a lid and simmer the meat for about 40-50 minutes. Monitor the water level and top up if necessary. During this time, the meat should become sufficiently tender and soft.

Start preparing the sour cream sauce about half an hour after you start stewing the meat. In a separate bowl, combine sour cream and flour. To avoid lumps, you can first mix the flour with a little water, and then add it to the sour cream. Dissolve the sour cream mixture with boiling water and add to the meat. Stir the dish well. Add pepper and salt to taste. Simmer the meat for another 5-10 minutes. If the sauce begins to thicken quickly, turn off the heat earlier.

Step 5

Remove the pan with meat from the heat and bake in the oven at 180-200 degrees until the sauce finally thickens. Sprinkle with grated cheese a few minutes before cooking. The result is a delicious cheese crust.

Step 6

Sprinkle the cooked beef in sour cream with chopped fresh herbs and garnish with tomato wedges, then serve. The dish is perfect with boiled potatoes, rice or buckwheat.
