Beef liver is one of the most beloved and most consumed by-products. The benefits of the liver can hardly be overestimated. It contains complete proteins, useful amino acids, a large amount of iron, copper, phosphorus, vitamins of groups B, E, K, D. The inclusion of liver dishes in the diet has a beneficial effect on the functioning of the brain, increases immunity, and also protects the body from the consequences of consumption alcohol and tobacco smoking.

Beef liver recipe in sour cream

To prepare the liver in sour cream, you will need the following products:

- 500 g of beef liver;

- 50 g lard;

- 80 g of carrots;

- 120 g of onions;

- 400 g sour cream;

- 40 g flour;

- parsley greens;

- salt.

Wash the beef liver, lightly beat it with a wooden mallet and clean it from the bile ducts and film. Then cut into slices, salt, sprinkle with pepper and roll in flour. Melt the lard in a frying pan and fry the finely chopped onions and carrots in it. Add the liver and stir-fry it, stirring occasionally. When the liver is ready, pour in the sour cream and some broth or water. Cover the pan with a lid and simmer the liver over low heat for 5-10 minutes after boiling.

Place the slices of the finished liver on a dish. Season the sour cream sauce obtained during stewing with salt and pour over the liver. Sprinkle with finely chopped parsley on top.

Liver recipe with mushrooms in sour cream sauce

To cook beef liver in sour cream sauce according to this recipe, you need to take:

- 700 g of beef liver;

- 300 g of fresh mushrooms;

- 1 head of onion;

- 3-4 tbsp. l. wheat flour;

- 150 g sour cream (15-20%);

- vegetable oil;

- 1 bay leaf;

- peppercorns;

- ground black pepper;

- granulated sugar;

- salt.

Rinse the liver, clear of films and bile ducts. Then cut into medium-sized slices, bread each in flour and fry in vegetable oil over high heat until almost cooked. Then salt and pepper the liver and fry for another 5-7 minutes.

Peel the onion and cut into small pieces. Wipe the mushrooms very thoroughly with a damp cloth, cut into thin slices and fry in vegetable oil along with onions. After that, transfer to the skillet to the liver.

Mix sour cream 15-20% fat with 100 milliliters of water and bring to a boil. Add bay leaves, salt, granulated sugar and ground pepper to taste. Pour the boiling mixture into a frying pan to the liver with mushrooms and onions and simmer over low heat under a closed lid for 15 minutes.

Serve the beef liver with the resulting sour cream sauce.

Liver recipe stewed with dry mushrooms

To prepare the liver in tomato-sour cream sauce, stewed with dry mushrooms, you will need:

- 500 g of beef liver;

- 100 g of dry mushrooms;

- 1 head of onion;

- 4 tbsp. l. sour cream;

- 2 tbsp. l. tomato paste;

- 4 tbsp. l. lard;

- pepper;

- salt.

Soak dried mushrooms in cold water for 8-10 hours, then boil. Pour the broth into a separate bowl, and finely chop the mushrooms. Peel the onion, chop into small pieces and fry together with the prepared mushrooms in vegetable oil. Season with salt and pepper.

Rinse the beef liver, clean it from the bile ducts and films. Then cut into small slices and fry in a saucepan with lard for 10-15 minutes. Add fried mushrooms with onions, sour cream, tomato paste, season with salt and pepper. Mix well, cover with mushroom broth and simmer for another 15-20 minutes until tender.
