- - 50 g parmesan cheese
- - 2 eggs
- - 1 tsp. apple cider vinegar
- - 1 tsp. honey
- - salt, pepper to taste
- - 2 tbsp. l. olive oil

Step 1
Wash the sole fillet under running water, pat dry with a paper towel. Prepare the marinade. Combine apple cider vinegar, honey, salt and pepper in a bowl until smooth. Spread the fish on all sides and leave to marinate for 15-20 minutes.
Step 2
During this time, prepare the fish breading. Place the almonds in a hot skillet and dry slightly. Then place in a blender and blend until crumbled. Grate the cheese on a fine grater. In a bowl, combine the almond crumbs and cheese, lightly season the mixture with black pepper.
Step 3
Beat eggs lightly in a separate bowl. Dip the fillets in eggs, then roll in breadcrumbs, again in eggs and breadcrumbs. Do the same with the second piece of fish. Pour oil into a preheated skillet. Fry the fish for 1 minute on each side without a lid and 6-7 minutes on each side under the lid until golden brown.
