Lamb rack is a European meat dish made from lamb ribs. It has many cooking recipes, but each involves the mandatory use of various spices, as well as bringing the meat to readiness in the oven. The result is an unusually tender and aromatic treat.
Basic principles of making rack of lamb
To create such a dish, you must use tasty and tender lamb meat, which does not require prolonged heat treatment. Namely - a loin, which is divided into ribs of the same thickness.
A variety of ingredients can be used as a marinade for meat: wine, soy sauce with and without additives, natural honey, mustard, a large amount of onions, olive oil with lemon juice. Lamb chops are also often combined with spices such as garlic, rosemary, thyme, ginger root, basil, black or red pepper. As a result of the correct combination of such products, the rack of lamb acquires a unique taste and aroma each time.
After marinating, the meat is usually fried in a pan for a short time until golden brown, and then brought to readiness in the oven. However, some recipes involve exclusively baking - then the dish turns out to be more healthy and dietary. Serve it with mashed potatoes or vegetables.
Lamb rack in honey mustard sauce
To prepare such a dish, you will need:
- 1 kg rack of lamb;
- 200 ml of Dijon mustard;
- 1 tbsp. a spoonful of honey;
- salt to taste.
Divide the rack of lamb into ribs and rub each with a mixture of mustard and honey. Then put in a ceramic or glass dish and refrigerate for 3-5 hours. After the allotted time, wipe the pieces of meat with a clean napkin, salt and fry for 1 minute on each side in a hot frying pan without oil. Then wrap the meatless portion of the ribs in foil to make it easier to eat. Place the rack on a baking sheet and bake at 180 ° C for 20 minutes.
Lamb rack in soy sauce with herbs
Ingredients:
- 1 kg rack of lamb;
- 4 tbsp. spoons of soy sauce with garlic;
- 2 tbsp. spoons of honey;
- 3 cm ginger root;
- a pinch of rosemary and thyme;
- salt to taste.
Divide the rack of lamb into several pieces of 3 ribs each. Add a little salt, as soy sauce also contains salt. Then prepare the marinade by mixing soy sauce, honey, and grated ginger root. Add herbs to the marinade and mix thoroughly. Marinate pieces of meat in this mixture and leave for 3 hours at room temperature. After that, wrap each one in foil and place in an oven preheated to 200 ° C for 25 minutes. Then reduce the temperature to 180 ° C and open the foil to brown the squares. Serve the finished square with grilled vegetables and red wine.
