Singe the chicken over an open fire, chop into pieces, rinse. Place in a saucepan and simmer over high heat. When the water starts to boil, drain it and replace it with fresh one, in this case the broth will be rich and will not foam.

Peel carrots, celery root and parsley, rinse, cut into large pieces or just halves, fry everything in a pan without oil, put in a saucepan where the chicken is boiled. Add a whole peeled onion or 3-4 shallots. This trick will add a wonderful aroma and taste. Cook for 40 minutes, but do not let the liquid boil, this is very important. The broth should be transparent with a pronounced amber color.
