There is one interesting and original first course. It is very easy to prepare and the taste is wonderful. The secret of the soup is that bran kvass is added there, so it is slightly sour. This wonderful dish is called Zama.
It is necessary
- Chicken - 1-1.5 kg
- Celery, parsley, parsnip (root) - 50-70 g each
- Onion - 1 pc.
- Carrots - 1-2 pcs.
- Bell pepper 1-2 pcs.
- Bran kvass - 250 ml
- Parsley (greens)
- Salt.
- Noodles:
- Egg - 1 pc.
- Flour - 100 g
- Salt.

Step 1
We begin to prepare this very deputy by kneading the dough for homemade noodles. The dough should be very tough. Now let's roll it out. We do this long and hard, until it turns into a pancake, a couple of millimeters thick, no more. We take this pancake and hang it in some place where you can dry it, for example, with a fan. After 30-40 minutes the dough dries, we cut it into thin, long strips. In short - we give the look of classic homemade noodles. Cut? Well, let yourself lie and dry. To avoid sticking, do not forget to shake it up periodically.
Step 2
Now let's get down to the broth. Boil the chicken, take it out, cool it and separate the meat from the bones. Cut the meat into small pieces and send it back to the soup. Add the whole onion. We will throw it away later, although there are lovers who love boiled onions.
Step 3
We clean the rest of the vegetables, cut them into cubes and add them there, wait for them to cook. Do not throw celery first, for example, and then carrots. It is clear that celery by the time the carrots are cooked will have lost all flavor and nutritional properties. So first, carrots, after 5 minutes - potatoes, then bell peppers and at the very end - celery with parsley and parsnips.
Step 4
After the vegetables are practically cooked, add the same kvass. For a 3-liter saucepan - 0.5 liters.
We have one more little secret. Add a tablespoon of sugar there.

Is it boiling? Add the noodles, cook for another 5 minutes. That's it. The zama is ready.
