Mushroom caviar is not only a very tasty and healthy preparation, but also an original appetizer that is perfect for a festive table. Try to cook it, it's not that difficult.

- -450 grams of fresh mushrooms,
- -100 grams of onions,
- -30 grams of vegetable oil,
- - a little pepper,
- - a little salt,
- -lemon juice to taste,
- -50 grams of green onions.
Instructions
Step 1
Fresh mushrooms, absolutely any that are at hand, we clean and wash. Cut into medium pieces, put in a frying pan and stew in your own juice until it evaporates (if desired, the mushrooms can be fried a little in vegetable or butter). You can use not only fresh, but also salted mushrooms (200-350 grams). If we take salted mushrooms, then we soak them to remove excess salt, since then we will salt and pepper. We pass the mushrooms through a blender or meat grinder.
Step 2
Peel the onions and cut them into small cubes. Heat vegetable oil in a frying pan (you can use olive oil to taste) and fry the onion cubes until golden. Make sure that the onions do not burn, otherwise it will not taste good.
Step 3
Combine mushrooms chopped in a blender and fried onions in a bowl. Add a little ground pepper, fine sea salt and a little lemon juice, mix well. Sprinkle with chopped green onions and serve.
Caviar can be used for making sandwiches, as an appetizer for a cold table and as a filling for vegetables.
