Delicious aromatic cutlets have long been one of the most popular dishes. They have taken root in our country so much that almost every family has its own recipe. Despite this, there is one trick in cooking cutlets that is common to all recipes. It is necessary to mix the minced meat until the "white threads" - that is, until the meat protein begins to come out.
For cutlets you will need:
- 500 g of beef;
- 300 g of pork;
- 100 g of onions;
- 100 ml of milk;
- 50 g of wheat bread;
- 40 g of vegetable oil
- 35 g flour;
- 5 g of salt;
- 2 g of ground black pepper.
Cooking cutlets
Prepare the meat: remove excess fat and coarse films. Examine the pieces carefully to see if there are any traces of the veterinary seal. Cut the beef and pork into small pieces - they should fit into the mouth of the meat grinder.
Peel and chop the onions. Many, preparing minced meat for cutlets, fry onions in vegetable oil; this recipe does not include roasting.
Remove crusts from wheat bread. Do not throw them away - "digging", you can make good bread crumbs from the crusts. Soak the breadcrumb in slightly warmed milk, hold it until all the milk is absorbed.
By the way, if desired, soaked bread in minced meat for cutlets can be replaced with rolled oats or grated potatoes on a fine grater. Such a replacement will not affect the quality of cutlets.
Mince meat, onions, and bread. To make the cutlets more tender, it makes sense to do it twice. If you plan that small children will eat cutlets, additionally process the minced meat with a blender. Season with salt, season with ground black pepper. Stir the minced meat with your hands until white threads.
Shape the minced meat into balls weighing 75-100 g, flatten them slightly and roll in flour. Cutlets according to this recipe will turn out to be even more juicy if you lubricate your hands with vegetable oil when molding the blanks.
Quickly fry the patties on both sides over high heat, then fold into one skillet and place in the oven. Sweat for about 20-25 minutes. at a temperature not higher than 80 degrees. With this method of heat treatment, the cutlets will be the most delicious.
