You will need:

- 500 g of sweet carrots;

- salt to taste;

- 1 teaspoon of sugar;

- 2 tablespoons of semolina;

- 1 tablespoon of wheat flour;

- vegetable oil for frying.

Choose juicy young carrots of sweet varieties, with which the cutlets will turn out to be especially tasty.

Wash the carrots with a brush, peel and chop. Put the vegetables in a saucepan, cover with hot water so that it barely covers the carrots. Add salt and cook the root vegetables until soft.

To speed up the process, carrots can be grated on a coarse grater and simmered in hot water.

Mash the cooked carrots, turning into mashed potatoes. Put semolina and sugar in the mass, mix. Salt the mixture to taste. Form small patties and drench them in flour. Heat vegetable oil in a frying pan and fry the patties on both sides until golden brown.

To prevent the dish from turning out to be too high in calories, do not pour too much oil into the pan. A couple of tablespoons are enough to fry one serving. Place ready-made items on a plate and keep warm. Serve hot, fresh sour cream can be served separately.

You will need:

- 400 g of juicy carrots;

- 1 onion;

- 2 cloves of garlic;

- 2 tablespoons of wheat flour;

- freshly ground black pepper;

- vegetable oil for frying;

- bread crumbs.

Peel the carrots and onions, crush the garlic in a mortar. Heat the vegetable oil in a skillet and fry the finely chopped onion in it until golden brown, then add the garlic and cook everything together for a couple of minutes. Grate the carrots on a coarse grater. Mix the onions with carrots, add flour, salt and freshly ground black pepper.

Form small cutlets with your hands, roll them in finely crushed breadcrumbs. Heat vegetable oil in a frying pan and fry the products in it on both sides. Serve hot.

Cutlets can be rolled in flour.
