Delicate and sweet muffins with cranberry sourness. It goes well with tea, coffee, and milk. Can be served as a dessert on a festive table or for breakfast for a child.
It is necessary
- - 200 g flour;
- - 125 ml of milk;
- - 100 g each sugar, mascarpone, cream;
- - 60 g of icing sugar;
- - 1 egg;
- - 2 tbsp. spoons of cranberries (berries or jam);
- - 1 teaspoon of baking powder;
- - 1 ml of vanilla essence.
Instructions
Step 1
First, sift flour into a large deep bowl, add sugar, baking powder, softened butter, egg and pour in milk. Mix until smooth so that there are no lumps.
Step 2
Add cranberry jam or a handful of fresh cranberries to the dough, stir. Take the muffin tins and fill them 2/3 full with dough - the dough will rise during the baking process. This makes about 8 muffins, but the exact amount depends on the size of your molds and the amount of dough you make.
Step 3
Bake the cranberry muffins at medium heat in the oven for 20 minutes. Check readiness with a toothpick. Let the muffins cool.
Step 4
Prepare muffin cream: mix mascarpone cheese with 35% cream, add powdered sugar.
Step 5
Place the resulting sweet cream on the cooled cranberry muffins. Top with extra fresh berries and mint leaves - a versatile muffin and cupcake decoration that always looks flawless.
