This original and very satisfying dish will surely please all eggplant lovers. It has an unusual taste due to the combination of vegetables, herbs and cheese. Eggplants stuffed with meatballs are perfect for a festive table.

- -3 eggplants
- -150 g minced meat
- -2-3 medium tomatoes
- -1-2 tablespoons tomato paste
- -1 medium onion
- -5-6 tablespoons of green peas
- -1 egg
- -2 tablespoons of bread crumbs
- -Greens
- -Salt, pepper, thyme, cumin, basil to taste
- -Vegetable oil for frying

Step 1
Wash and peel the eggplant. Cut a little along the middle with a knife. Put in salt water for 10-15 minutes. Then drain the water and pat dry the eggplants with a towel.
Step 2
Pour vegetable oil into a deep frying pan. Fry the eggplants on each side in hot oil. Remove and place on a paper towel.
Step 3
Place the minced meat in a bowl. Break an egg there. Add grated onion, breadcrumbs, finely chopped herbs, salt and spices. To stir thoroughly. Make small balls of minced meat and fry them in vegetable oil. Then put on a paper napkin.
Step 4
Place the diced tomatoes, tomato paste, peas and a pinch of basil in a skillet. Simmer for 7-8 minutes. Add the sautéed meatballs. Simmer for 3 minutes, stirring occasionally, then remove from heat.
Step 5
Fill the eggplant with the meatballs and tomato sauce. Sprinkle with grated cheese on top. Put the eggplants on a baking sheet and place in a preheated oven for 10-15 minutes. Serve hot.
