It is necessary

  • - pumpkin seeds 2 tbsp. l.
  • - yellow raisins half a glass
  • - olive oil 2 tbsp. l.
  • - finely chopped 3/4 cup white onions
  • - ground red pepper 2 tsp.
  • - ground cumin half a teaspoon
  • - dried cherries quarter cup
  • - orange liqueur half a glass
  • - unsalted vegetable broth 500 ml
  • - corn starch 1 tbsp. l.
  • - finely chopped garlic 4 tsp
  • - peeled shrimps 1 kg
  • - orange peel grated 1 tbsp. l.
  • - Swiss chard lettuce, coarsely chopped, 6 handfuls
  • - cooked brown rice 3 cups
  • - salt pepper

Instructions

Step 1

Fry the peeled pumpkin seeds in a pan for one to two minutes until light brown.

Step 2

Rinse the raisins thoroughly (you can pre-soak them in water for a few minutes), grind them in a blender to a quarter glass of water until puree.

Step 3

Peel and finely chop the onion, place a large skillet over medium heat, heat a tablespoon of olive oil in it, add the onion and sauté until it becomes translucent. Add finely chopped cherries, raisin paste, pepper, a teaspoon of finely chopped garlic, cumin to lightly stewed onions. Mix everything and simmer for about one minute. Add orange liqueur to the contents of the pan and give the alcohol the opportunity to evaporate, not forgetting to stir the cooking dish, this procedure will also not take more than two minutes.

Step 4

Pour vegetable broth into the pan, wait until it boils, and immediately reduce the heat.

Step 5

We dilute cornstarch in two tablespoons of cool water and very carefully, gradually pour it into the pan and make the fire less. We continue to cook the dish for about ten minutes more.

Step 6

Then put the shrimp in a frying pan and cook them for about five minutes, until they turn whitish.

Step 7

Then add the grated orange zest, salt and pepper. Turn off the stove, transfer the contents of the pan to a bowl and set it aside.

Step 8

Heat a tablespoon of olive oil in a frying pan, add lettuce and three teaspoons of garlic. While stirring, cook for about five minutes. Drain the excess liquid and mix the lettuce with boiled brown rice.

Step 9

Arrange the rice and shrimp on plates and sprinkle with pumpkin seeds on top.
