A langet is a thin piece of meat. Translated from French, this word means "tongue". The name very accurately characterizes the shape of the dish. To prepare this dish, cut pieces of meat no more than 2 cm thick from the lumbar part of the beef carcass. The slices are cut crosswise. The popularity of this dish is due not only to the fact that it can be prepared quite quickly, but also to the ability to supplement it with almost any side dish. Langet is served with potatoes, porridge, cabbage, vegetable salads.

Step 1
Wash the beef tenderloin and pat dry with a paper towel. Cut it into slices no more than 1.5 cm thick. Cut across the muscle fibers. This direction is very noticeable. This method of cutting has taken root because the short muscle fibers easily separate from each other and are easier to chew.
Step 2
Fight off each "tongue" on both sides. It is most convenient to do this on a cutting board with a special wooden hammer. The meat should become soft, and the slice should turn into a thin plate, which should be given an oval shape. Sprinkle the splint with salt and pepper to taste.
Step 3
Preheat a skillet and pour vegetable oil into it. To get a bloody splint, wait until both sides are crispy and press down on the slice with a fork. If the meat is done, light juice will go. A dark liquid is released from insufficiently roasted meat. Langet "with blood" is cooked no more than 4-5 minutes, each side is fried for 2-2.5 minutes.
Step 4
It will take a little more time to cook a medium-fried langet. Fry the broken slice for 2 minutes, then turn over and keep in the pan for the same time. Turn the splint twice more, frying for 2 minutes each time. In order to get a completely fried piece of meat, it will take a total of 8-10 minutes. Do not forget to turn it over in time, otherwise you risk getting coal instead of meat.
Step 5
Take care of the sauce. Mushroom or tomato is very suitable for splint. For tomato sauce, finely chop a small onion. Fry the onions until golden brown in the same oil in which you fried the meat. Add 1 cup tomato juice and saute until the sauce thickens.
Step 6
For mushroom sauce, chop the onion and fry. Boil the mushrooms in a little water, cool and chop them. Pour flour, salt and pepper into sour cream, add fried onions and mushrooms. Mix thoroughly. The sauce can be added both during cooking and after. In the first case, it is necessary to pour the sauce over the lightly fried meat and bring it to readiness in a saucepan over low heat. If you want to serve the sauce separately, put the mixture on low heat, bring to a boil and simmer for 5-7 minutes.
