The dumplings prepared according to this recipe turn out to be remarkably satisfying. Fried pieces of bacon and onions give the filling a rich taste.
It is necessary
- - 415 g flour;
- - 310 ml of water;
- - 3 eggs;
- - Salt;
- - 525 g of beef liver;
- - 185 g of lard;
- - 215 g of onions;
- - 55 ml of vegetable oil.
Instructions
Step 1
Peel the onion, rinse thoroughly and cut into thin rings. Cut the bacon into small pieces. Clean the beef liver of film and veins. To make it softer, pre-soak for 1 hour in milk.
Step 2
Wash the finished liver, dry it slightly and cut into small cubes no more than one centimeter in size.
Step 3
Fry pieces of bacon in a preheated pan. When they are well done, remove them with a slotted spoon and put the chopped onions in the same skillet.
Step 4
Saute the onions for about 7 minutes. Then put the pieces of liver in a skillet with onions and continue cooking for another 35 minutes.
Step 5
Then remove the pan from heat, cool everything a little and chop with a blender until smooth. Add greaves and salt to this mixture, mix and pepper lightly.
Step 6
Boil 510 ml of water. Sift the flour into a large bowl and then very carefully pour hot water into it. Stir everything very quickly, so that lumps do not have time to form.
Step 7
Break the eggs into a small bowl, add 400 ml of warm boiled water, sugar and a little salt to them, mix everything thoroughly.
Step 8
Pour this mixture into a bowl with diluted flour and start the dough. Then leave it in a bowl, covered with a towel, for about 45 minutes.
Step 9
After that, divide the finished dough into two parts and roll it out into a layer no more than 3 mm thick. Using a glass, cut circles from this layer. Then put a little liver filling on each circle and seal the edges properly.
Step 10
Boil water in a deep saucepan, add salt and boil the dumplings until tender. They can be served with sour cream and fried onions.
