Rinse lemons and eggs thoroughly with warm water. Remove the zest from two lemons with a grater and put it in a cup. Pour granulated sugar into the same container. Squeeze the juice from four lemons and pour into the total mass, mix.

Break the eggs into a separate bowl and beat with a fork. It is unnecessary to bring to foam. Gently mix the eggs with the lemon mixture. Let the mixture sit for 20-30 minutes. During this time, the lemon zest will give off its own special aroma.

Pass the infused food through a sieve. This is necessary so that pieces of zest, seeds from lemon, and those parts from eggs that have not been mixed do not get into the cream. Strain the mixture into a saucepan.

Step 4

Then place the container of ingredients over medium heat. While heating, stir the food constantly with a wooden spatula. When the cream thickens, put the butter in a saucepan. Continue stirring and heating. The action of boiling the cream will take 4-5 minutes. The thickening of the cream mass will not happen immediately, but it will happen at a certain moment rapidly.

Spread the finished cream in containers and cool to room temperature. The lemon cream can then be stored in the refrigerator for up to seven days. Serve the lemon cream with scones, toast, or ice cream.
