If you love fish, but you do not always have the opportunity to spend a lot of money on it, a budget fish like pollock can come to the rescue. It can be easily found in stores in the frozen food section. In addition to the low price, the advantage of this fish is that it is practically boneless and does not require cleaning, but is prepared in a matter of minutes. Try baking pollock in the oven. The dish will turn out to be tender, juicy and very tasty.

- - sunflower oil - 50 ml;
- - ground black pepper to taste;
- - salt - 1 tsp;
- - red hot pepper - 2 pinches (optional);
- - lemon - 1 pc. (optional);
- - fresh dill - 1 bunch (optional);

Instructions
Step 1
First, you need to defrost pollock, leaving it at room temperature for 2 hours. Alternatively, move it from the freezer to the refrigerator on the top shelf overnight. If you are in a great hurry, you can use the defrost function in the microwave. Alternatively, put the fish in a bag and dip it in a bowl of cold water. But to preserve juiciness and taste, such quick defrosting methods should be dispensed with only in extreme cases.

When the fish is ready for processing, cut off the tails, if any, and rinse them under cold running water. Then dry the pollock with paper or kitchen towels and transfer to a large bowl. In this case, the carcasses can be left whole or chopped into portions.
Step 3
In a separate small bowl, combine ground black pepper, salt and sunflower oil. Pepper is taken to taste, and salt in the amount of 1 level teaspoon will be quite optimal. If you like zesty flavors, you can add a couple of pinches of red hot pepper. It will not only make the dish sharper, but also give the crust an additional beautiful shade.

Then coat the pollock evenly on all sides so that each piece is covered with the oil mixture. Then turn on the oven and set the temperature to 220 degrees. Pollock itself is quite dry, so it is important to bake it at a high temperature. In this case, the fish will cook quickly, but all the juiciness will remain with it.
Step 5
While the oven is preheating, take a baking dish, brush it with sunflower oil and line the fish in a single layer. Then you can send the workpiece to the oven. After 20 minutes, increase the temperature to 250 degrees and continue baking for another 5 minutes.
Step 6
Remove the finished pollock from the oven and transfer to a dish. If you wish, you can pour over the juice squeezed from one lemon, or simply cut the fruit into circles and lay them on top. Serve the fish sprinkled with chopped dill and fresh vegetable salad.
