It is necessary

1 kg of fat-free cottage cheese; - 200 g of curd cheese; - 5 eggs; - 180 g of corn grits; - 2 tsp baking powder; - 6 tbsp. liquid stevia; - 50 ml rum

Instructions

Step 1

Stevia is a relatively recently commercially available natural sweetener produced from the plant of the same name, which is also called honey herb. Stevia is 300 times more sweet than sugar. It is produced in three varieties - powder, tablets and in the form of a liquid solution, which is very convenient to use when baking.

Step 2

Rub the curd through a sieve. Separate the yolks from the whites. Put the whites in the refrigerator, and mix the yolks with cottage cheese and curd cheese until a homogeneous air mass is formed. Throw in liquid stevia and rum. As you continue to stir, add the corn grits spoon by spoon. In the absence of this, you can use ordinary wheat flour or even semolina. But it is corn that will give the future cake a pleasant yellow tint, and on a dietary plan, it is also preferable to wheat derivatives.

Step 3

Beat the cooled proteins with a mixer until a strong foam is obtained. Spoon by spoon add them to the prepared mass. Try to stir very carefully so as not to disturb the airy structure of the proteins.

Step 4

Lubricate a 24 cm round detachable form well with oil, sprinkle with semolina or coconut flakes. Thanks to such a sprinkling, the finished cake will not stick to the mold after baking and it will be easy to get it out of there.

Step 5

Pour the dough into a mold, bake at 180 ° C for at least an hour. Remove the finished cake from the oven and leave to cool right in the mold. And only when it becomes so cold can you take it out and put it on a dish.

Step 6

If you wish, you can sprinkle the cake with a small amount of powdered sugar, but if the dessert is intended for people with diabetes, it is better not to do this. Just garnish the cake with fresh berries and serve.
