Homemade sea buckthorn jam

You will need:

- 1 kg of sea buckthorn berries;

- 1 kg of sugar.

Jam can also be made from several varieties of berries, for example, from a mixture of sea buckthorn and raspberries.

Since the sea buckthorn berries are small and contain seeds, you will need time to prepare the berry mass for cooking the jam. Wash the sea buckthorn, peel off leaves and twigs, dry. Rotate the berries through a meat grinder until they turn into a puree. Wipe the finished sea buckthorn mass through a sieve or filter through a thin cloth.

In fact, for cooking jam, you will only have berry juice with a small amount of pulp. Pour the juice into a saucepan, bring to a boil and cook for 10-15 minutes. Then add sugar and cook for another 15 minutes. The sugar should completely dissolve and the jam should thicken.

The sea buckthorn pulp remaining after squeezing the juice can be used to prepare healthy sea buckthorn oil, which has a wound healing effect.

Prepare jam containers. Place the jars with metal lids in a saucepan with a towel on the bottom. Pour water into a container, bring to a boil and keep the jars for a few minutes. Then take out the dishes and dry them. Pour the jam into jars and roll up the metal lids using a special machine.

Store the cooled jam in a cool place, and after opening the jar - in the refrigerator. This jam can be served with tea as a main dessert or used for baking. Also, sea buckthorn jam can be the basis for fruit drink or berry jelly.

Homemade sea buckthorn muffins

This unusual recipe will help you diversify your traditional dessert menu.

You will need:

- 250 g of sea buckthorn berries;

- 2, 5 tbsp. flour;

- 1 tbsp. brown sugar;

- 1 tbsp. dry yeast;

- 1 tbsp. milk;

- 1/3 Art. vegetable oil;

- 2 eggs.

Combine flour, sugar and yeast in a deep bowl. Crack the eggs and add there along with the vegetable oil. Pour in the milk and stir the dough so that no lumps form. Let the dough stand for half an hour to allow the yeast to dissolve. Meanwhile, wash and dry the sea buckthorn berries. Add them to the dough.

Lubricate the muffin tins (best if they are silicone) and pour the dough into them. The dough should not reach the edges, but should take up a maximum of 3/4 of the mold's volume. Preheat the oven to 180C and bake the muffins in it for 25 minutes. They should rise and brown. Remove them from the molds immediately after cooking.

Muffins can be served as a stand-alone dish, with berry or sweet cream sauce, or ice cream.
