Sambar soup can be safely called a multifunctional dish. In Indonesia, it is served on the table not only for lunch, but also as an addition to the rice side dish.
It is necessary
- - 800 g vegetable mixture (green beans, eggplants, tomatoes and carrots)
- - 200 g lentils
- - vegetable oil
- - 2 hot peppers
- - mustard seeds
- - cumin
- - turmeric
- - grated coconut
- - salt
- - any boiled meat (optional)
Instructions
Step 1
In a small saucepan, bring lightly salted water to a boil. Add lentils pre-soaked for several hours and simmer for 20-25 minutes over low heat.
Step 2
Cut the vegetables into small cubes and fry in vegetable oil until golden brown.
Step 3
In a separate skillet, fry a small amount of mustard seeds in vegetable oil. You will hear a characteristic crackling sound. When the clicking sound stops, add a few pinches of turmeric, grated coconut, caraway seeds and ground coriander. Re-fry all ingredients, stirring constantly.
Step 4
Transfer vegetables to the spiced pan and stir thoroughly. Fry the mixture for several minutes.
Step 5
Combine the fried vegetables with the lentils without draining the pot. Cook the ingredients until the mixture begins to thicken.
Step 6
Garnish the soup with fresh herbs or add a little sour cream before serving. Traditionally, this dish is offered to guests with a special Indonesian flatbread called "pratha".
