Cauliflower is not only suitable for hot dishes - it can be used to make delicious salads. To make the dish harmonious, complement the tender cabbage with bright flavors of nuts, herbs, ham, vegetables and a variety of sauces.
Cauliflower salad with nuts
This Georgian-style dish has a bright, slightly spicy taste. It can be served before a hearty meat meal. Cabbage salad will whet your appetite without adding extra calories.
You will need:
- a small head of cabbage (about 700 g);
- 100 g of walnuts;
- a bunch of fresh herbs (cilantro, parsley, celery);
- salt to taste;
- vegetable oil for dressing.
Use peanut butter to make the dish especially tasty. But if not, take refined sunflower or olive oil.
Disassemble the cabbage into inflorescences, rinse and dip in boiling salted water for 3 minutes. Then fold it in a colander and let the water drain. Finely chop the cooled cabbage and pre-washed greens.
Fry the walnuts in a dry frying pan, cool and grind in a mortar so that you get a large crumb. Put cabbage, herbs, nuts in a deep bowl, add vegetable oil and salt, mix and serve.
Salad with green dressing
This dish can be served alone or as a side dish for meat, fish, fried sausages.
You will need:
- 1 kg of cauliflower;
- 0.25 cups of chopped herbs (parsley, basil, dill);
- 0.25 cups of vegetable oil;
- 0.25 glasses of lemon juice;
- 2 tbsp. spoons of sour cream;
- 2 teaspoons of sweet mustard;
- 2 cloves of garlic;
- salt.
Disassemble the cabbage into inflorescences, rinse and blanch for a minute in salted boiling water. Place the cabbage in a colander and then soak in very cold water for 1 minute. Drain the inflorescences in a colander again and let the water drain.
Rinse the greens and chop finely, grind the garlic in a mortar with salt. In a jar with a tight-fitting lid, combine olive oil, lemon juice, mustard, and sour cream. Add the herbs and garlic and stir the sauce until smooth.
Put the cauliflower on a dish and cover with the sauce. Serve immediately, accompanied by fresh white or whole-grain bread.
Danish salad with pasta
This unusual salad turns out to be quite satisfying. The recipe can be slightly changed by dressing the salad not with butter, but with fresh yogurt without additives.
You will need:
- 200 g of cauliflower;
- 200 g of spiral pasta;
- 200 g lean ham;
- 100 g of celery root;
- 5 tbsp. tablespoons of olive oil;
- 1 teaspoon of sweet mustard;
- 1 tbsp. a spoonful of wine vinegar;
- salt;
- freshly ground black pepper.
Thinly sliced bacon can be used in place of ham.
Boil the pasta according to the instructions on the package. Discard them in a colander. Disassemble the cauliflower into small inflorescences, blanch in salted boiling water for 2-3 minutes and drain. Cut the ham into thin strips. Grate celery root. Place all ingredients in a salad bowl.
Pour oil into a screw-top jar, add salt, mustard and vinegar. Shake the jar well, then pour the sauce over the salad, season it with ground black pepper, stir and serve.
