  • - 480 g of strawberries;
  • - 1 cup + 6 tablespoons Sahara;
  • - 6 yolks;
  • - 3 cups of cold heavy cream;
  • - 1 tsp vanilla essence.

Instructions

Step 1

Prepare your dessert container by lining it with cling film.

Step 2

Chop the pistachios into coarse crumbs.

Step 3

Rinse and dry the strawberries, mix with 6 tablespoons of sand, pass through a blender, and then through a sieve to make a thick berry syrup.

Step 4

Pour the yolks (note, they should be at room temperature!) Into a saucepan and place in a low-boiling water bath. Beat until the mass increases in volume, then transfer the bowl to a container of cold water and stir until the mass becomes cold and thickened.

Step 5

Whisk the cold cream until peaks with the addition of vanilla.

Step 6

Toss 1/3 of the cream into the yolk mixture first, then gently stir in the rest. This must be done carefully so as not to precipitate the cream.

Step 7

Combine half of the creamy mixture with the berry syrup, mix until smooth, put in a prepared container and level. Add pistachios to the second part and lay it on top of the strawberry layer. Cover with cling film and place in the freezer for at least 12 hours (maximum 72 hours). Serve in 2 cm wide slices.
