Place a dish of fragrant macaroons on the table and very soon there will be no crumb left on it. This nutty dessert is not only much tastier, but also incomparably healthier than its counterparts made from wheat flour. And, despite its simplicity, it is sophisticated enough not only for home gatherings, but also for festive tea drinking.

It is necessary

  • For a simple recipe:
  • - 300 g of raw almonds;
  • - 1 chicken egg;
  • - 150 g of sugar;
  • - 10 g vanilla sugar;
  • - vegetable oil;
  • For a French recipe:
  • - 110 g almond flour;
  • - 4 chicken egg whites;
  • - 225 g of icing sugar;
  • - 200 g milk chocolate;
  • - 100 ml 33% cream;
  • - 50 g of sugar;
  • - 1/2 tsp lemon juice;
  • - a pinch of salt;
  • For a vegetarian recipe:
  • - 200 g of almonds;
  • - 120 g of oatmeal;
  • - 90 g sugar;
  • - 80 ml of boiled water and vegetable oil + for greasing the baking sheet.

Instructions

Step 1

A simple recipe for macaroons

Pour boiling water over the nuts and leave for 10 minutes, then discard in a colander. Peel them of brown skin, place on a baking sheet and dry in the oven at 160oC for 5-10 minutes. Cool the almonds, transfer to the bowl of a blender or food processor and crush into crumbs.

Step 2

Mix the resulting dry mass with two types of sugar. Whisk the egg in a separate bowl, pour it into the nut mixture and mix well. Soak your fingers in warm water and mold the prepared dough into round shapes.

Step 3

Line a baking sheet with parchment, coat with vegetable oil and lay out the raw biscuits. Preheat oven to 170oC and bake for 10-15 minutes.

Step 4

French macaroons

Combine almond flour with powdered sugar and sift everything together through a fine sieve. Mash the egg whites with lemon juice and salt, then stir in sugar in small portions. The mass should be shiny and white.

Step 5

Toss the dry and creamy mixtures in a gentle vertical motion with a spatula or spoon from bottom to top. Fill a piping bag with them and squeeze the circles out onto an oiled baking sheet. Bake the macaroons for just 10 minutes at 150oC.

Step 6

Heat the cream in a saucepan and completely melt the chopped chocolate in it. Make a cake from every two baked items, glue them together with a creamy chocolate layer. Refrigerate dessert for 20 minutes.

Step 7

Vegetarian macaroons

Crush the almonds with a blender or coffee grinder (you don't need to remove the skin or do it as in the first recipe), then add the oatmeal and grind it again. Sweeten the cooked "flour" with sugar and thicken with water and oil, pouring them in gradually, spoon by spoon. The dough should turn out to be quite greasy, practically not sticking to your hands. Put it in the refrigerator for 30 minutes.

Step 8

Preheat oven to 180oC. Grease a baking sheet or ovenproof dish with vegetable oil. Roll walnut-sized balls from the nut mass, place in a bowl at some distance from each other and flatten. Bake the cookies for about 15 minutes until golden brown.
