  • - premium flour - 200 g;
  • - whole grain flour - 100 g;
  • - water - 250 ml;
  • - vegetable oil - 3 tbsp. l.;
  • - salt - 1/2 tsp;
  • - soda - 1/3 tsp.
  • For filling:
  • - potatoes - 300 g;
  • - dill - 50 g;
  • - salt - 1/2 tsp;
  • - spices: ground black pepper, ground fenugreek, asafoetida.

Instructions

Step 1

Combine premium flour, whole grain flour, baking soda, and salt in a deep bowl. Add three tablespoons of sunflower oil, stir.

Step 2

Boil water. Pour boiling water into the dough in a thin stream, stirring constantly with a spoon. When the dough has cooled, knead it with your hands. The dough will be elastic and pliable. Wrap the dough in a bag and set aside for a while.

Step 3

Go ahead and prepare the filling. Wash the potatoes and peel them. Then the potatoes should be chopped and cooked over medium heat. Do not forget to salt it at the end of cooking.

Step 4

Wash and finely chop the dill. Then mash the mashed potatoes. Add chopped dill and spices to mashed potatoes: black pepper, asafoetida and fenugreek. Fenugreek will give the puree a mushroom flavor, asafoetida - the spicy aroma of onions and garlic. Stir the filling thoroughly.

Sprinkle flour on the table. Roll out the dough into a layer 3 mm wide. Cut out circles from the dough with a glass. Then put the filling on each circle. Pinch the edges, you can use a pigtail.

Cook the dumplings in boiling water. After they pop up, it will take 2-3 minutes. Some of the dumplings can be frozen. Then they can be not only cooked, but also fried.

Serve the dumplings with fresh chopped vegetables or a vegetable snack. They will also be delicious with squash caviar.
