It is necessary

  • - wheat flour - 4 glasses (240-250 ml each);
  • - vegetable oil - 100 ml;
  • - salt - 1 tsp;
  • - water - 300 ml;
  • - potatoes - 0.5 kg;
  • - onion - 1 piece;
  • - vegetable oil - 1 tablespoon;
  • - salt, pepper - to taste.

Instructions

Step 1

First, prepare the filling for the dumplings. Peel, chop and boil the potatoes, drain and mash the tubers.

Add the diced onion, sautéed in oil. Add salt to taste. And black pepper, which will add a touch of piquancy to the dish.

Now set the filling aside and make the dough.

Step 2

There are many options for making lean unleavened dough. A feature of the above recipe for lean dough for dumplings is that very hot water is used for its preparation. That is, the dough is not just lean, but choux. This allows you to use the dough immediately, you do not need to stand for the prescribed 30-60 minutes in order for the flour to be sufficiently saturated with liquid.

Step 3

Measure out the specified amount of wheat flour into a wide bowl. Use regular premium flour for general use with a gluten content of at least 10. Put salt in the flour, stir and add vegetable oil. Grind the flour and butter to form an oil crumb. Now pour boiling water into this crumb and stir. Knead a little dough with your hands and you can use it right away.

If you are not going to cook dumplings right away, then the choux lean dough perfectly retains its qualities. It can be left to wait in the refrigerator or at room temperature.

Step 4

Roll the dough into a circle or cut into several pieces and roll into sausages, which are then cut into pieces and roll out into round tortillas. Cut into squares from a circle of dough or cut out circles with a mold. Place the filling in the center, seal the edges and cook in boiling salted water. When the dumplings come up, you can take them out with a slotted spoon and cook the next portion.

Grease ready-made dumplings from lean dough with vegetable oil or butter with stewed onions.
