A delicious airy dessert made from whipped proteins, cream, berries and fruits got its name in honor of the famous ballerina Anna Pavlova. However, real ballerinas and everyone who looks after their health and figure should not abuse it - the delicacy is high in calories. But a small piece of an appetizing basket cake or a portioned meringue with berries will definitely not harm you. Prepare Pavlova for evening tea or serve it on the festive table - and enjoy!

    • 2 squirrels;
    • 100 g sugar;
    • 1 teaspoon of starch;
    • vanillin;
    • 0.5 teaspoon vinegar;
    • 300 ml of heavy cream;
    • 2 bags of vanilla sugar;
    • Strawberry
    • blackberry
    • raspberries and grapes for decoration.
    • Cake "Pavlova":
    • 3 squirrels;
    • 150 g sugar;
    • 1, 5 teaspoon of starch;
    • vanillin;
    • 1 teaspoon vinegar
    • 300 ml of heavy cream;
    • 2 bags of vanilla sugar;
    • 100 g of sugar for syrup;
    • 2 tangerines;
    • 2 pears;
    • strawberries and grapes;
    • zest of one lemon;
    • fresh mint for decoration.

Instructions

Step 1

Dessert can be portioned - in the form of meringue baskets - or resemble a large cake with fruits. First, try making Pavlova cakes. Carefully separate the whites from the yolks and pour them into a deep bowl. For the best whites, remove the eggs from the refrigerator beforehand and never try to whisk completely fresh eggs.

Step 2

Beat the whites with a mixer or whisk until sharp "peaks" appear. Gradually pour half of the sugar into the beaten mass, continuing to grind until a homogeneous glossy cream is formed. Add the remaining sugar, starch, vanillin, vinegar and beat the mixture again - it should become firm. Take your time - high-quality whipped proteins are the key to the beauty of the finished dessert.

Step 3

Line a baking sheet with parchment paper and arrange the beaten egg whites in round, flat-bottomed baskets with rims. Place the baking sheet in the center of an oven preheated to 150 degrees. Bake for about an hour at low temperature until light brown. Remove the meringues from the paper before they have cooled down, otherwise they will stick.

Step 4

Whisk in heavy cream with vanilla sugar. Place them in the center of completely cooled baskets. Cut strawberries and large grapes in half. Place them on top of the cream, adding some blueberries, blackberries or raspberries.

Step 5

Be sure to prepare a large basket of Pavlova dessert for the festive table. It looks very impressive and will make a great impression on the guests. Prepare the protein mass according to the previous recipe. Line two baking sheets with parchment paper. Lay out a large circle with rims on one - the future fruit basket. On the other, with the help of a pastry bag, plant two arcuate handles.

Step 6

Place the baking sheets in a warm oven and bake for about an hour and a half. Check the readiness by carefully removing the baking sheet with the basket from the oven. Its edges should dry completely and acquire a beige tint, and the bottom should remain soft. Carefully remove the blanks and transfer them to a dish.

Step 7

A large basket can be filled not only with berries, but also with fruits. Peel and seed two pears. Put sugar and lemon zest in a saucepan, add 300 ml of water. Put the mixture on fire and heat until the sugar is completely dissolved. Place pears in syrup and cook for about 2 minutes, then remove and refrigerate. Peel two tangerines, choose large and beautiful strawberries and black grapes.

Step 8

Whisk in 300 g vanilla sugar cream. Place the cream in a basket and lay the fruit beautifully on top. Attach the handles to the sides of the basket with whipped cream. Boil the syrup for 10 minutes until golden brown. Chill it slightly and pour over the fruit. Garnish with fresh mint leaves.
