Crab sticks in batter are an elementary and at the same time original appetizer that will perfectly fit both an ordinary feast and become an exquisite culinary addition to any festive table.
For 15 servings of snacks (standard packaging) you will need: 300 g of crab sticks, lemon juice, butter, spices, 3 chicken eggs, 2/3 cup flour, ½ cup milk or water, herbs (dill, parsley) and pickled cucumber (for decoration).
Crab sticks must be thawed and freed from the cellophane wrap.
To prepare batter, you need to carefully divide the eggs into yolks and whites. In the yolks, finish off the spices (salt, pepper, oregano) to taste, beat intensively with a whisk. Pour milk into the mixture (and in the absence of it - water), mix thoroughly. Without stopping stirring, gradually add sifted flour to the mixture to make a batter, which in consistency resembles a pan for a pancake.
Beer batter can be an alternative to the standard recipe. For its preparation, it is necessary to take water and beer (70 ml each) instead of milk in equal proportions and knead the dough in the same way.
Beat the whites thoroughly with a mixer until a thick, stable foam forms, which would not flow out of the bowl. Spoon the whipped egg whites gently into the mixture.
The best way to heat the vegetable oil is in a deep skillet or small saucepan. There should be enough oil so that the crab sticks can be completely immersed in the hot liquid.
Next, you need to chop a crab stick on a fork and dip it in batter, completely dipping it into the mixture. Gently place the sticks in hot oil. Deep-fry them until golden brown.
In order for the whites to whisk better, they must be pre-cooled. It is advisable to place the bowl in the refrigerator for 15 minutes before you start whipping.
To remove excess fat from the prepared dish, you need to spread the sticks on paper napkins. If you wish, you can decorate the dish with herbs and pickles. A great addition would be tartar sauce or mayonnaise.
Following the rules of a healthy diet, sour cream sauce can be made at home. To do this, you need to wash and chop the herbs, mix with sour cream, sprinkle with lemon juice. Pass a couple of garlic cloves through a garlic extractor and mix with the rest of the ingredients. Serve with the main course.
In total, the preparation of the dish will take 35 minutes, and the pleasure of the culinary masterpiece will last for the whole evening. A simple and original recipe will add a "sea flavor" to the festive table.
It is best to take out crab sticks with a slotted spoon, the use of which will not violate the integrity of their shell.
Alternatively, crab sticks can be stuffed. To do this, it is worth choosing large sticks so that it is convenient to fill them with filling. The filling is made from processed cheese, grated, mixed with a small amount of mayonnaise, chopped garlic and herbs. The defrosted sticks must be carefully unwound, put a teaspoon of the filler, carefully spreading it over the entire surface of the stick, twist, giving the dish its original shape.
