A mysterious dish with a wonderful melodious name "risotto" is the national dish of Italy. There are a great variety of cooking options for this dish. It is necessary

    • 200 g of rice for risotto;
    • 1 large carrot;
    • 1 onion head;
    • 100 g frozen green peas;
    • 100 g green beans;
    • 2 medium tomatoes;
    • 100 g parmesan cheese;
    • 3 tablespoons olive oil
    • ½ glass of dry white wine;
    • ½ l of vegetable broth.

Instructions

Step 1

Cut green beans into small pieces. Peel and cut the carrots into small cubes. Cut the onion into squares. Pour boiling water over the tomatoes, and then peel them off. Cut the tomatoes into cubes. Grate Parmesan and set aside.

Step 2

Heat the olive oil in a deep frying pan and fry the onions in it until transparent. Add chopped carrots and green beans. Place the frozen green peas in the skillet. Stir the vegetables, cover, reduce heat, and simmer for about 10 minutes.

Step 3

Pour rice into a frying pan with vegetables, turn the heat up and fry the rice for several minutes, stirring constantly.

Step 4

Pour white wine into the rice, stir and cook until no liquid remains. Then pour a little vegetable broth into the rice, reduce the heat, season with salt and simmer until all the broth is absorbed. Remember to stir.

Step 5

Add broth to rice in small portions after the previous portion is completely absorbed.

Step 6

Add the chopped tomatoes to the skillet when the rice is almost done. Stir everything and simmer for another 6-7 minutes. Rice is completely ready, if you taste it, you feel how a tender and soft grain of rice remains a little hard inside.

Step 7

Turn off the heat, add the grated Parmesan to the pan and stir everything thoroughly. The risotto is ready! Place it on a plate and garnish with sprigs of basil or parsley. Serve the risotto immediately after cooking.
