Despite the popularity of potatoes as an ingredient in first and second courses, there are many soup recipes that do not use potatoes. For example, hodgepodge, kharcho soup or cheese soup.
Cheese soup without potatoes
To make this delicate soup, take:
- processed cheese - 3 pcs;
- butter - 50 g;
- onions - 1 pc;
- green onions - 100 g;
- carrots - 1 pc;
- pasta - 100 g;
- smoked ham - 300 g;
- garlic - 2 cloves;
- salt - to taste;
- pepper - to taste.
First, peel the carrots and onions, grate the carrots, chop the onion finely. Put the skillet on the fire, heat the oil, and fry the vegetables until tender. While the frying is cooking, cut the processed curds into small cubes to melt faster. Then cut the smoked ham into strips or cubes and sauté the meat and vegetables for 5 minutes.
Place the curds in a saucepan of boiling water and stir until the cubes dissolve. Then add the cooked frying, salt and pepper. Bring the soup to a boil, squeeze a clove of garlic into it and extinguish the heat - the soup is ready. Serve with cream or sour cream, if desired, garnished with a sprig of greens.
Beef kharcho soup
To prepare a simplified Georgian beef soup, take:
- beef - 1 kg;
- carrots - 1 pc;
- onion - 1 pc;
- Bulgarian pepper - 1 pc;
- tomato - 1 pc;
- tomato paste - 3 tablespoons;
- rice - 200 g;
- garlic - 3 cloves;
- hot pepper - to taste;
- vegetable oil - to taste;
- salt - to taste;
- pepper - to taste;
- cilantro - to taste.
First, rinse the meat thoroughly and cook the broth. Then cut the washed and peeled carrots into thin long strips and fry them in vegetable oil. Chop the peeled onion and bell pepper. Add peppers and onions to the carrots, season with tomato paste and lightly fry. Then add a couple of hot pepper chunks to the dish. Pour some water into the skillet and simmer the vegetables for 5 minutes. You can add your favorite spices, such as turmeric, saffron, or nutmeg, if you like.
Rinse the rice thoroughly and place it in a saucepan with the prepared stock. Add salt. When the rice is ready, place the frying in a saucepan and cook for another 5 minutes. Then add chopped garlic and chopped cilantro to the soup. Let the dish brew for half an hour and serve.
Solyanka without potatoes
To make a spicy hearty soup, you will need:
- lemon - 1 piece;
- allspice peas - 2-3 pcs;
- bay leaves - 1-2 pcs;
- onions - 4 pcs;
- tomato paste - 100 g;
- capers - 50 g;
- carrots - 1 pc;
- olives - 100 g;
- pickled cucumbers - 4 pcs;
- smoked meats - 300 g;
- beef bones - 500 g;
- butter - to taste;
- vegetable oil - to taste;
- salt - to taste;
- pepper - to taste.
It is better to cook such a hodgepodge in the second broth. Therefore, first put the meat to boil, when the water boils, drain the water, then put the meat and bones in the pan and fill it with water again. When the broth boils, put the roots, carrots in a saucepan and cook until tender. Strain the resulting broth through cheesecloth folded in three layers to get a clean broth.
Then chop the onion and fry until golden brown, salt. Mix the onion with tomato paste and place in an oven preheated to 90 ° C for an hour and a half.
Cut into small pieces of smoked meats. If you want to add softness to the hodgepodge, add milk sausages to the list of ingredients. Smoked meats need to be fried in a pan so that the soup does not turn out to be too fatty. Cut the cucumbers into strips. Heat the pickle from cucumbers slightly, adjust the amount of pickle depending on taste preferences and the amount of broth.
Place the smoked meats in the boiling broth and cook for about 10 minutes. Add onion with tomato paste and cook until tender. 10 minutes before the end of cooking, add capers, cucumbers and pour in the brine. Olives and lemon are best placed directly on a plate before serving.
