Cupcakes come with almost any kind of filling. I suggest you experiment a bit and cook them with cottage cheese and pistachios. This is not only a very tasty dessert, but also a great treat for any tea party.

- - wheat flour - 220 g;
- - butter - 110 g;
- - sugar - 150 g;
- - cottage cheese - 200 g;
- - egg - 3 pcs;
- - baking powder for dough - 1 teaspoon;
- - almond essence - 1 teaspoon;
- - pistachios - 50 g;
- - walnuts - 50 g;
- - lime - 1 pc.
Instructions
Step 1
With pistachios and walnuts, do the following: Remove the shells from them and place them in a blender. Grind this nut mixture, but not to the state of small crumbs, since in this case it will absolutely not be felt in the dish.
Step 2
Soften butter by holding at room temperature and combine with granulated sugar. Whisk this mixture, then add cottage cheese to it. Mix everything thoroughly until a homogeneous mass is obtained. Grind the lime zest with a fine grater, and squeeze the juice out of its half. Add these ingredients to the bulk along with the almond essence. Stir again.
Step 3
In the resulting curd mass, add nuts and a chicken egg. Combine flour and baking powder and sieve through a sieve. Add to the rest of the mixture. Stir well and knead the dough.
Step 4
Grease the muffin tins thoroughly and place the resulting dough in them. Preheat the oven to a temperature of 190 degrees and send the dish into it for about 20-25 minutes.
Step 5
Remove the cooled pastries from the molds and boldly serve. Pistachio curd muffins are ready! Optionally, you can decorate them, for example, with chocolate icing.
