-
- Stroganoff pork:
- 800 g pork fillet;
- 1 tablespoon vegetable oil;
- 20 g butter;
- 2 onions;
- 2 tablespoons of brandy or cognac;
- 1, 5 cups sour cream;
- salt;
- ground black pepper;
- paprika;
- parsley.
- Pepper steaks:
- 700 g lean beef;
- 2 tablespoons black peppercorns;
- 2 tablespoons of vegetable oil;
- 50 ml of water;
- 1 tablespoon brandy;
- salt.
Instructions
Step 1
Try Stroganoff pork. This delicious and very satisfying dish takes only a quarter of an hour to cook, so the meat remains very juicy. Wash a piece of pork, remove excess fat and films, pat the fillets dry with a paper towel. Cut it into narrow long pieces.
Step 2
Chop the onion into thin rings, mix half the vegetable oil and butter and fry the onion in this mixture. Place it on a separate plate. Add the remaining oil to the skillet, heat up and add half of the meat. Fry it for 3-4 minutes, place on a plate. Cook the remaining pork in the same way.
Step 3
Return both portions of the meat to the skillet, pour the brandy into it and simmer for 3 minutes until the alcohol evaporates. Add onion, sour cream, salt, a pinch of paprika and ground black pepper to the pork. Bring the mixture to a boil, keep it on fire for another 1-2 minutes and place the meat in a deep dish. Sprinkle with finely chopped parsley on top.
Step 4
Stroganoff pork is served with a side dish of boiled noodles or rice, accompanied by a glass of well-chilled dry white wine.
Step 5
If you have a piece of lean beef, use it to make pepper steaks. Cut the fillets into thick slices across the grain. Crush the black peppercorns in a mortar. Press down firmly on each piece and press the peppercorns into the meat on both sides. The pepper should cover the steaks with a thin crust. Leave chunks at room temperature for 10 minutes to soak in the peppery flavor.
Step 6
Heat vegetable oil in a heavy-bottomed skillet and fry the steaks on both sides. Transfer them to a plate and warm. Pour water and brandy into the pan where the meat was fried, scrape off the remaining beef from the bottom and sides with a wooden spatula.
Step 7
Bring the mixture to a boil, add salt and pour over the prepared steaks with the resulting sauce. Serve with sautéed potatoes and green salad. Red table wine is suitable as an accompaniment.
