Step 1
Cut the eggplant into circles, you can slightly obliquely so that the pieces are larger. The approximate thickness is up to 1 cm. It is better not to remove the peel, otherwise the product will turn into mashed potatoes during frying.

So that the eggplant does not taste bitter (and it tastes bitter because of the solanine content), soak the pieces in salted water for 20 minutes.

Preheat a frying pan over low heat, pour in vegetable oil.

Roll the eggplant slices in flour and salt, put in a pan and fry until a crust forms on both sides.

Eggplant goes well with garlic, so let's prepare a garlic sauce: squeeze out a few heads of garlic and mix with mayonnaise (proportions to taste).
