It is necessary

  • - watermelon pulp - 1 kg;
  • - sugar - 1 kg;
  • - water - 400 g (for syrup);
  • - vanilla - 1 sachet (2, 5-4 g);
  • - lemon - 0.5 pcs.

Instructions

Step 1

First, you need to cut the watermelon into thin slices so that they are easier to boil. After cutting, remove all seeds from them and cook in water for 4–8 minutes. The exact time is determined by the condition of the slices, they must be cooked until soft.

Step 2

Then you need to get the watermelon pulp and put it in the refrigerator, after soaking it in water. You need a little water, but the slices should be completely immersed. All this should be infused for about eight hours.

Step 3

Make sugar syrup before removing the pulp from the refrigerator. Putting water on fire, you need to gradually add sugar there, stirring the contents. Check if all the sugar has dissolved. While maintaining the temperature of the boiling syrup, you need to get the slices of watermelon from the refrigerator, pour them with the prepared sugar mass and leave for 12 hours.

Step 4

It is possible to shorten the cooking procedure. To do this, a mixture of syrup with slices must be cooked over low heat for 20-30 minutes. Thanks to this move, the infusion time is reduced to three hours. The taste will change slightly, so you have to choose the one that suits you.

Step 5

After infusion, the jam is cooked until a homogeneous, slightly thick mass. Stir it regularly. Before the end of this stage, add vanilla and lemon juice there. Try the sour jam before adding the lemon. If the sweetness of the watermelon is low, this ingredient will spoil the taste.

Step 6

In the last stages of cooking, carefully check the taste of the jam. Even watermelons of the same variety can have dramatically different sweetness and softness, which can be corrected with additional hours of cooking or infusion.

Step 7

At the end of cooking, a translucent delicacy should come out that looks more like jam. Conservation takes place as standard. The cans are processed with steam, then an even hot treat is poured into it. You need to carefully roll up the cans and let them cool.
