    • 2 bunches of parsley;
    • 2 cloves of garlic;
    • olive oil;
    • 6 tbsp grated parmesan;
    • 50 g almonds;

    • zest of half a lemon;

Step 1

For the sauce, it is best to use freshly picked parsley. It is more aromatic than frozen, juicier, and contains immeasurably more vitamins.

Step 2

Pesto can last up to one week in the refrigerator, so it can be prepared in advance. For lunch or dinner, you just need to boil the pasta in accordance with the instructions on the package, and after 10-15 minutes a delicious and healthy dish will be on your table.

Step 3

To make pesto, first fry the almonds in a dry skillet over medium heat. Do not forget to constantly stir the nuts so that they do not burn and become bitter. Once they are browned, remove the pan from the heat.

Step 4

Place the parsley, almonds, parmesan and garlic in a blender bowl. Season the mixture with salt and freshly ground pepper, add a little wine vinegar or lemon juice, then turn on the blender and thoroughly grind the food in the bowl.

Step 5

While blending in a slow trickle, start pouring olive oil into the pesto until you have a sauce of the desired consistency. It is quite enough if its density is like a store sour cream.

To make spaghetti, boil 4-5 liters of water in a large saucepan, add salt and olive oil. Dip the pasta in boiling water and cook for as long as indicated on the package. Usually it is recommended to do this for 9 to 12 minutes. Finished spaghetti may seem a little undercooked, but it should be, the core should remain a little hard.

Drain, add pesto to the pasta and stir in the sauce. Sprinkle a small amount of grated lemon zest on the plate already on the plate.
