Dumplings can be made with absolutely any filling. I suggest you experiment a bit by cooking them with nettles and mushrooms.
It is necessary
- For the test:
- - flour - 280 g;
- - semolina - 50 g;
- - large eggs - 3 pcs.;
- - olive oil - 1 tablespoon;
- - fine sea salt - 1 teaspoon;
- - cold water - 1 tablespoon.
- For filling:
- - shallots - 2 pcs.;
- - butter - 60 g;
- - leaves of young nettle - 200 g;
- - salt;
- - chanterelles - 200 g;
- - potatoes - 3 pcs.;
- - egg - 1 pc.
Instructions
Step 1
Combine flour with salt, sift through a sieve at least 2 times. Add semolina to this dry mixture, as well as raw chicken eggs, olive oil and cold water. Mix everything well until smooth, then knead the dough - it should turn out steep. Wrap it in either a plastic bag or cling film and put it in the refrigerator for 30 minutes.
Step 2
After peeling and chopping the shallots into small pieces, place them in a frying pan and fry in a tablespoon of butter. Then add the young nettle leaves to it. Pepper and salt the resulting mass. After removing it from the heat and transferring it to a separate dish, cool it, then put it in the refrigerator for a while.
Step 3
Rinse the mushrooms thoroughly under running water, then dry. If you use frozen chanterelles to make mushroom dumplings, just defrost them. Cook until cooked, then cool and chop.
Step 4
After thoroughly washing the potatoes, boil them in slightly salted water until cooked. When it's done, peel it off and pass it through a sieve. To the resulting potato mass, add a mixture of nettles and onions, as well as one raw chicken egg and finely chopped chanterelles. Mix everything properly. The filling for the mushroom dumplings is ready.
Step 5
Turn the dough into a flat layer and cut small circles out of it using a dish with a round neck. Place one teaspoon of the resulting filling on the edge of each of them. Cover the mass with the free side and fix the future dumplings. After blinding them, let them stand at room temperature for 30 minutes.
Step 6
Mushroom dumplings with nettle are ready! It remains only to boil them.
