Nettle contains many vitamins and other nutrients. Therefore, in summer, it's time to prepare delicious salads with young nettle leaves.
Beef and nettle salad
Ingredients:
- 400 gr of boiled beef;
- 2 boiled potatoes;
- 2 hard boiled eggs;
- 300 grams of nettle leaves;
- 1/2 cup canned peas;
- 1/2 onion;
- greens of dill and parsley;
- sour cream for dressing.
Preparation:
1. Cut the boiled beef, eggs and potatoes into small cubes.
2. Finely chop the onion and add to the salad. Pour the peas there.
3. Wash nettle leaves well, put them in boiling water and boil for 2-3 minutes. Remove the leaves, cool and chop finely into a salad.
4. Add the salad with chopped herbs, salt and season with sour cream, mix.
Nettle salad with radish and cucumber
Ingredients:
- 200 grams of young nettle leaves;
- 2 small cucumbers;
- a bunch of fresh radish;
- greens: onions, parsley, dill;
- salt;
- any rast. butter.
Preparation:
1. Wash vegetables and herbs in cool water.
2. Cut radishes, cucumbers and nettles, chop fresh herbs.
3. Mix the prepared ingredients, salt, add vegetable oil to taste.
Nettle salad with apple and honey
Ingredients:
- a handful of nettle leaves;
- 2-3 green apples;
- 10 hazelnuts;
- 1 spoon of lemon juice;
- 1 spoonful of fresh honey;
- vegetable oil.
Preparation:
1. Wash the apples and grate coarsely. Add chopped nettle leaves.
2. In a separate bowl, combine butter, honey and lemon juice. Season the salad. Pour crushed hazelnuts on top. Decorate with mint leaves.
