Nettle in May - early June, collected in an ecologically clean area, will enrich the daily menu with unusual and tasty dishes. This unpretentious and healthy plant can become not only the main ingredient of the usual green salads and cabbage soup. You can cook cutlets with nettles and please your family with a hearty, and at the same time light, dinner.
Potato cutlets with nettles
Prepare steep mashed potatoes (800 g potatoes for 300-350 g nettle greens). Rinse the nettle leaves in running water and pour boiling water over so as not to prick your hands, then chop. Fry finely chopped onion in refined sunflower oil, simmer with herbs for 6-8 minutes and mix with potatoes. Add salt and pepper to the minced meat to taste, beat out 2 raw eggs and mix everything well.
Blind cutlets from the resulting mass. Beat the egg in a separate bowl. Dip the blanks in it, then roll them in flour. Fry the nettle and potato patties in a skillet in sunflower oil on both sides until golden brown. Serve with sour cream or yogurt.
Oatmeal cutlets with nettles
An excellent simple recipe for dietary nutrition is nettle and oatmeal cutlets. For this light meal, pre-soak a glass of cereal in water so that it swells like porridge. Pass 300-350 g of washed and chopped nettles through a meat grinder, a bunch of onion feathers and parsley, a large onion. Boil a couple of potatoes, moisten and add to the minced meat.
Add 2 raw eggs to the resulting mass, salt and pepper everything to your liking. Stir the minced meat thoroughly and form into small patties. Dip them in wheat flour or crushed breadcrumbs and fry on both sides until lightly browned.
Try nettle and oatmeal cutlets with a cube of chicken stock - they taste like meat. In this case, carefully add salt to the minced meat! For an even lighter meal, you can bake it in the oven for 15 minutes on each side. 5 minutes before cooking, put a plate of processed cheese on each cutlet.
